Cream Cheese Pancake (Blintz)

This is more of a keto recipe. I have one now and then for a treat. You can look up recipes for cream cheese pancakes. They are simple. Here are the macros for how I made it.

1 oz. Cream cheese Cals 100 Fat 10 Protein 2 Carb 1
1 egg Cals 75 Fat 5 Protein 7 Carb 1
¼ C Cottage Cheese Cals 55 Fat 2.5 Protein 7 Carb 2
tsp. Sour Cream Cals 10 Fat 1
SF Apricot Jam Cals 10 Carb 5
Cals. 250 Fat= 18.5 Protein =16 Carbs = 9

I usually make up a few at a time for leftovers. They work great for wraps or tacos. Blend 1 oz cream cheese and 1 egg (ratio is 1-1 so double or triple accordingly). One ounce cc and one egg make one pancake. Add a tiny bit of stevia or Splenda for a bit of sweetness if desired (I don't). Add a dash of cinnamon (I use nutmeg). Blend on high. Fry batter in a heated skillet just like a pancake.
I spread a tsp of SF jam on the pancake, center 1/4 cup of cottage cheese, fold, and dot the top with a bit of sour cream (about a tsp or less). The lower fat the dairy, the more carbs it contains.

Making this tonight! My weekend was nuts, didn't batch cook for the week, was wondering what I was going to eat...I GOT ALL THESE INGREDIENTS IN MY HOUSE!!!

Way more exciting than my usual go-to hard boiled egg!!!
