dense protein???

I am not sure why, but lunch meat often bothered me after surgery for a while. I still find that if I tend to retain water when I eat it -- and I do go for the lower sodium varieties. I've just never been a huge lunch meat fan.

I tend to use whatever protein source I have cooked for dinners to make lunches. I usually eat some cubed chicken, part of a pork chop, a hamburger patty, etc. Tuna, shrimp and even deviled eggs or egg salad also makes the rounds.

Sometimes I do make "pizza" -- which is some pepperoni slices with some shredded mozzarella and a tad of pizza sauce cooked on a plate in the microwave.

would ground beef be ok? I like to make a combo of refried beans, ground beef or turkey, salsa, tomatoes, onions, a sprinkle of cheese... layered. Heated up... its delish. Could that be used as a snack or meal?

That does sound good but I would have to leave out the beans because of the carbs in it
