I'm looking for a tasty, healthy protein pancake recipe that is bari-friendly and made w/o banana. Does anyone know of such an animal?

I make one using almond flour, protein powder and seltzer or club soda. Is that what you are looking for?

1/4 almond flour/meal

1 T vanilla protein powder

1 egg

3 T. seltzer or club soda (it really makes a difference -- but in a pinch, I've used watered down cream or almond milk -- it's not as good)

1/4 tsp vanilla extract

1 T. melted butter, coconut oil, or oil

Sugar substitute to taste (I tend to use stevia, but anything will do)

Be careful when you cook them -- they don't bubble like "regular" pancakes.

Oh, thanks for the almond flour idea!

My husband makes protein pancakes for the kids. No banana in them, he just subs some of the flour for whey protein. Between the protein powder, eggs and milk it's OK on protein but not super fantastic. He still uses regular flour, and he adds blueberries to the mix. The kids eat them plain without syrup, so no added sugar there. I avoid them because flour, too many carbs for me.

Would that be 1/4 cup of almond flour? Is the 1T of butter, coconut oil, or oil used in the frypan to cook them?

1/4 Cup of almond flour (sorry, I was rushing)

and 1 T of the fat is IN the batter.

I don't use anything on the pan -- I have an old cast iron griddle that is well-seasoned -- not sure if you would need to otherwise.

Eggface has a ricotta pancake recipe with no banana in it. As someone who doesn't like ricotta plain I would say they were grittier than I expected, but good with some SF jam or syrup :)

I make the Eggface Ricotta pancakes but leave out the SF sweetener and eat them savory or put SF syrup on them which sweetens them up plenty. I also use the Kodiak Protein Pancake Mix for the 3 TBSP of mix in the recipe. That makes it 14g of protein per serving (I can eat one half, but I pair with laughing cow cheese and bacon/sausage).

I did 8 oz of cream cheese, 8 eggs and 4 scoops of Quest Vanilla Milkshake powder. It was too dense. So i upped to 16 oz of cream cheese, 8 eggs, and 3 scoops of protein, it was a little yoo eggy. I think next time, I'll do 16oz cream cheese, 6 eggs and 2 scoops of protein powder.
