i had not had it either, but I like to try new stuff so figured what the heck. It wasnt bad at all. Tastes like beef. Such is the case, I wont bother doing it again. If it had a distinct flavor (not gross tho) I would add to rotation of proteins, but it came out tender and taste wise like a nice brisket...

Wow, you are a legit foodie! I was also struggling with a decent sear and got it figured out. It was my cast iron pan. Not sure if I was not getting it hot enough or what have you, so switched pans. Chefsteps recommended Darto pans- they are carbon steel and forged in one piece. No rivets for crap to get gunked up on, oven safe, works better than cast iron and similar minus a little weight. Love these pans! Anyway, I have a gas stove and heat these up ripping hot, add butter then sear about a minute or so each side. Awesome sear.
Pans are from Argentina, but the company ships wicked fast. They made it to Michigan in 4-5 days.

Try some different pre-made sauces to go with things like roast beef, it'll make a huge difference in the flavor. I get the jars of "simmer sauce" from Safeway and they work great!

I have the Joule and absolutely love it. I also have the Instant Pot brand circulator, and that is only meh. It is much bulkier than my Joule and clumsier to use in general. One of my pressure cookers also has the ability to do sous vide via the scripts function, but that is more of a pain. It was good given I planned to buy a second pot anyway and it gave me a chance to try it out to see if I would like it, but almost immediately I picked up the Joule.
