I have been doing this for years but I don't think I have seen it posted. You guys probably already know this, but the muffin tin is one of my best tools for portion control. I use it for mini meatloaf, several egg recipes, and more.  I get several servings at one time and can freeze them to.  Great quick "what am I going to eat" problem solver.  Try it you may like it

I agree- very helpful- I do egg cups, lasagna, etc in mine

protein muffins (using quest bars, protein powder etc)

Happy New Year!  Great reminder ... I have seen them used in recipes but now you jolted my brain to in fact use them myself.
