Low carb, kid friendly recipes

Hey everyone.  I was speaking to my friend here at work and she told me that her 12 year old daughter, who has always had a bit of a weight problem, is now pre-diabetic and she's trying to change the way the girl eats.  I've been talking to her about healthy food, and she's asked me for recipes, and for the life of me, I can't think of anything other than egg cups and turkey taco meat that might appeal to a kid.

So, lay it on me.  I don't need the full recipe, but just some ideas.  If you have a recipe handy, please share, but more I'm just looking for ideas.

things like stir frys are easy for teens to make too. I'm a big believer in involving kids in food prep. 

But really, I don't know if I'd be looking at kid friendly specifically, but rather changes to the way they cook and eat as a family. I know if I had been singled out and made to eat different than my family, it would not have been a good scene. And the chances of me eating meat and cheese as an after school snack when there were crackers or junk food around, would literally be zero.

There's a great book called Eat Like a Dnosaur. It's paleo, but lots of low carb ideas in there.  It's very kid friendly, and it's available for Kindle and Kobo too.

I often go on Pinterest for idea's. In our house we use Romaine lettuce to wrap many of our foods such as taco's, sloppy joe's, chicken salad but I was talking with another member today who suggested using peppers. The kids may or may not like peppers but could appeal to them due to the variety of colors you could use.

I have a recipe book from Pampered Chef called "29 minutes to dinner."  Although many of the recipes have carbs in them, many do not.  There are lots of recipes for easy soups, plus meats with sides of vegetables or salads.  Overall, I think the recipes are pretty healthy.  My kids really like them.  My boys are 12 and 14.

When I was an infant, mom would give me a porkchop in my playpen.

6'3" tall, male.

Highest weight was 475. RNY on 08/21/12. Current weight: 198.
