Getting back on track
So I am now 6 pounds down after resetting my mind set. I am having difficulty finding alternative protein sources since chicken and beef makes me throw up. Also I'm having a hard time getting my liquids down. I'm trying to avoid sweets and crunchy stuff so I can detox. Do anybody have advice about quitting chips and sweets?
You just have to quit. Cold turkey. It really sucks for a week, but after that it gets easy.
Stick to it. It's worth it.

Instead of chips I use pork rinds. Or peperoni chips, or raw veggies "chips" (sliced veggies)
Sweets - if I absolutely want some - I may eat some Low sugar fruits..(berries) or get some nuts. .

I agree with Grim, just stop - cold turkey. For me, substitutions just make me crave/miss the real thing, so they don't work as an option.
How about fish, pig, and eggs? Why do chicken and cow make you throw up? Have you tried different chicken/cow options? Like tender dark meat, ground chicken/cow, braised cow cuts like chuck roast?

I also tend to avoid chicken breast these days, at least whole breasts - it's better if it's cut up in a curry or something. Chicken thighs, however... they're like my new bff :)

I too experienced the 'shakiness' the first few days. Honestly, it stops when you stop re-introducing the carbs.
If you need a buffer try some 'xylitol' based things to help for the first week (too much of this ain't good for the body though, so don't use it long term). This could be a protein bar, shake, or other higher protein, lower carb, item with sugar alcohol inplace of other sugars.
Keep pushing; you're on your way... Push past the pain to your best health.
