I get rotissieri chicken that has been pulled off the bone - dry roasted but no sauce, so similar to the pulled pork that your are talking about. (I have had to cut back because there is a lot of salt in the spices used and I am going on 2 years post-op. )
However, I might avoid the pulled pork at this time and until you reach your goal weight.
I would avoid the pulled pork during the first 6 months when weight loss is easier and use this time to retrain your palate to eat more simply. I would not buy it but if you made it and knew everything that was in it, I might consider it. I have also moved away from nitrates which are common additives in smoked meats.

Every time I've seen pulled pork, or another sort of meat that's been smoked, for a sandwich, it has been slathered in some type of sauce. If you can order it dry - that's great. Smoked meat is delicious.

Here in Oklahoma we can order it dry... along with chopped beef. Now getting a rib that's dry is another story, but it can be done.

I buy pork loin and cook it in the oven. It is lean and tender. I season it with whatever I am in the mood for--cumin, chili powder, salt, pepper, chipotle, etc.
You have been given a lot of good food advice over the past several posts. Eat your protein first. IF you have any room left, eat some nonstarchy vegetables. Avoid grains, bread, rice, pasta, crackers, chips, potatoes, and sugar of any type. Be warned that sugar free products often contain a lot of sugar alcohols, which can cause a lot of GI upset.
