Cinco de Mayo Day! What is your favorite recipe?

Hi Members 

Refried beans and cheese were my go to when I first started my soft foods stage. Yum....  Here is another recipe I loved to eat.

 

Almost home made chicken tacos

1 store cooked rotissary chicken
1 pkg Multi Grain toritillas
1 pkg shredded LF cheese 
1 bunch cilantro
1 can pintos beans
1 can of tomatoes with chilis

Add the can of tomatoes to the beans, bring to boil.
Warm tortillas in the microwave and chop the cilantro.  Serve it family style, the chicken on a platter, just peel off chicken skin, place in warm tortilla sprinkle with cheese and cilantro. You can serve beans on the side but my family just puts a scoop on the taco.

Happy Cinco de Mayo to all (even though it's the anniversary of a battle and Americans are the only ones that really celebrate it LOL we love a good party)

Don't have a specific recipe but definitely Tacos. Its 1/3 of my 3 part weakness. The other two being Pizza and anything

peanut butter. Luckily I'm much better these days of confining it to one day and week and with much moderation.

We had a potluck at work for Cinco de Mayo and I made little "eggrolls" filled with taco meat, black beans, cheese and rotel tomatoes with chilis.  They were delish

Throw boneless chicken thighs in the crockpot with a block of cream cheese and a packet of ranch seasoning. Cook, shred, and top with cheese and salsa.

OR

Marinate deveined shrimp in tequila, lime, and garlic. Sautee in a bit of olive oil. Top with avocado, FF sour cream, soft Mexican cheese, and salsa verde. 

Both work great as tacos for non-WLSers, I use flour with chicken and corn for the shrimp. But the "guts" work fabulous in a bowl for no-carb folks.
