I try and add protein and fiber to most things I eat.  I'll put them in oatmeal, greek yogurt, smoothies, sugar-free pudding, coffee, ect.  I also crush up protein chips (like Quest chips) and put them in salad with chicken and a bit of cheese.

Dehydration and carb withdrawal can be a cause of headaches. Insomnia is sometimes an effect of ketosis. I usually have trouble sleeping when I first get back into ketosis.

i have upped my water intake. I did have a feeling it was that issue. I feel much better today.
