Target...Field Trip All Natural Turkey Jerky...1oz=12g protein...3 carbs...2g sugar...EXCELLENT but spicy!!

I've been looking into making my own.. which dehydrator do you use?  do you marinade the meat or use a rub? can the dehydrator be used to make chicken, turkey and fish jerky?

I actually use my oven which has a dehydrate setting that I can set super low.  I dehydrate at 100F.  I use Alton Brown's recipe and omit the honey.  I also use eye round roast, since it's more economical and dehydrates very well.  

I haven't played around with non-cow jerkies yet, since the beef jerky is so freaking delicious!

I have two favorite beef jerky brands I've discovered in the last year or so.  The first is Jim Dandy Beef Jerky.  It's a company out of Minnesota.  Unfortunately, here in Michigan, the closest I've found it was just across the Mackinac Bridge, about 3 hours away.  I have family up there, so I stock up whenever we visit.

The other beef jerky I found that I really love is Mingua Beef Jerky, made in Kentucky.  We were driving back from Florida last summer, I tried some, and I had to stop and stock up before leaving the state.  It's really good if you like dry beef jerky, and that's my favorite type.  I haven't ordered any online yet, but it's been long enough, and I'm jonesing enough that I need to.

I tried some jerky 8 months out from surgery.... ate 1 ounce and got constipated for 3 days. 

 

IIIIIIIIIII think I'll pass.
