Breakfast Casserole

Does anyone have a recipe for a egg casserole, I prefer one with limited ingredients (what I have in my house) that is kind of low carb (but I'm open to using potatoes.

I have fresh spinach, tons of eggs, potatoes, tomatoes, cheese (bags of shredded cheese), onions, milk, a bit of cream, shallots, garlic, and a few other odds and ends. I know it's enough to make something, and I found a ton of recipes online, but I prefer one that I know is tried and true.

I've seen ones that you just put whatever you have in a muffin tin and then pour eggs on top, but I'm looking for more of that "creamy" texture.

Just throw all that stuff together,  you have the makings for some awesome eats. I rarely use a recipe for something like that.  

I do put everything into my fitness pal to track calories and protein.

Thanks everyone, I got it.

I actually threw everything into a bread loaf pan, then scrambled eggs with some cream and poured it on top. I baked for 30 minutes at 350.

Next time I will use more cheese and add more salt and pepper....perhaps some green chillies.
