5 days post-op and scale has not budged

My doctor told me not to expect any loss until three weeks post op. I did lose pretty much right away because I guess I did not retain fluids from the hospital but he was very clear that normally losing really starts three weeks out.

100% normal for any surgery that's this significant. You retain tons of fluid, there's swelling, it's all super unpleasant inside your body right now. Just let it sort itself out and weight yourself next week, but don't expect any real results for a while. You may also hit a plateau around like week 3-5. It's normal.
