Kraft cheese slices aren't real cheese, neither is Velveeta. The former I enjoy as a grilled cheese sandwich, the latter I don't like at all. I liked liked Velveeta as a kid but I avoid it as an adult. I have a big package of Pepper Jack cheese slices in the fridge I'm trying to work my way through.

I eat a fair amount of cheese, and have ever since surgery (but I guess my answer depends on what you consider "much"...). I eat two servings of cheese on an average day, both as part of two of my snacks. Some days I eat three, some days one (but always at least one).
My surgeon didn't have us count calories or carbs, but gave us a list of foods to eat only in moderation (and cheese and nuts -- my primary sources of fat, along with red meat) -- were both on that list, so I limited them a lot more when I was losing.

I eat a lot of string cheese, since it's already portioned out and really easy to keep in my mini-fridge at work. I'm afraid that if I got an enormous block of something (havarti, perhaps) that I could inhale the whole darn thing.

Yep. Pre-portioned is the only way to go. I still find it hard not to finish a package of something. If it's one ounce of cheese or six, I'll fini**** I'll only buy the small servings.

It is good if you have the time to do that. I find the package string cheese is pretty reasonably priced. It is so nice to have something when you are really hungry to grab quick and go.
I used to package stuff. But I found that I would graze without realizing it. So I figure this saves me from old habits.
