Broth???

I just went to a local higher end grocery store in my area to get some different broths to try so I can get ready for my pre-op diet. There is not a big selection, just plain on chicken and beef broth.

Looking for suggestions on your favorite broths and where you found them.

Chicken and beef are the staple broths but it can also be vegetable broth, fish or seafood broth, lamb broth (very tasty),  veal broth (lighter than beef). I got them right in my kitchen! So easy to make. This is how I do it: 

chicken leg and thigh skinned but with the bones

an onion (peeled, whole or cut in half) a carrot or two, a few celery branches, a few cloves of garlic peeled but whole, salt and pepper, fresh herbs like parsley, dill, thyme,  bay leaf, sage. Put it all in a pot with water - for one chicken leg and thigh I would use a medium sized pot and abt 1.5-2 litres of water (sorry don't know what that would be in imperial, I only know metric), bring to a boil then turn down to lowish heat but not totally low and simmer for an hour or so. Taste to adjust salt. Simmer some more. Then strain and your broth is ready. If you are on liquids you won't be eating the carrots and chicken but later you can. I throw out the onion and celery. 

The same principle applies to anyting you use as the base for your broth. Dill is particularly good with fish broth. And rosemary with lamb broth.

Freezes great so you can make a bunch at once.

I love homemeade broths, like Julia suggests.  I think they are especially good for us, because they have the nutrition from the bone.

But I also buy from the store.  I like the Kirkland chicken stock from Costco, in boxes, not cans. I also really like the Pacific brand stocks from our grocery store.  These are also in quart-sized boxes.  On our grocery shelf, there are some other good-quality broths near the a Pacific brand, but I do not remember their names.  

Overall, and this is a huge generalization, I think you get a better quality stock/broth in the qt sized boxes.  The broths in cans are often mostly flavored, rather than real stocks, with higher socium content, often with MSG or other additives.  So maybe look for the boxes?

Campbell's (Swanson?) keeps advertising flavored chicken broths -- Thai Ginger, Mexican Tortilla...I can't find them anywhere.  I don't have any giant grocery stores near me, tho...maybe you'll have better luck?  I've found a ton of frozen broths, too.  Check that section maybe?

I've seen them at my Walmart super center.. I bought the tuscan chicken flavor and didn't care for it

Good to know!  Someone else on the board had good things to say about the Thai Ginger - but I was more excited about the Tuscan and the Mexican.  Thanks for the heads up!

Swansons makes those flavor infused broths.   I have the Mexican Tortilla and it is delicious!   A bit spices but full of flavor.  I add some to the cream of chicken soup to give it more flavor.   I just bought the Tuscanny Chicken, I think I would like the Thai Ginger too but didn't see that.  I'll have to look.
