Chili is a staple for me.  If you like the taste of Wendy's Chili, here's a copycat recipe:  http://www.topsecretrecipes.com/Wendys-Chili-Copycat-Recipe. html

It really tastes like the real thing.  Plus, you can modify it for exactly like you want it (I often cut the beans in half, and add another pound of beef).  Then, save it in single serve portions.  That way, it's really easy to take one portion out of the freezer, pop it in the microwave, and your meal is all set. 

Or try an number of thousands of chili recipes out there.  If you're worried about the carbs, make a Texas style chili.  They don't put beans in it, and usually have some form of steak.  If you cook it in the crockpot all day, it'll be super tender.  White chicken chili is awesome too.
