I've been reading a lot of recipes, looking especially for low carb. Just had surgery, and in four weeks I get to the "ROL" stage.
I found this one - looks very interesting and simple. Stuffed Frittatta Roll (Note: Rocket Leaves = Arugala, and 180c = 350f)

Here's an easy one!
1 pork roast or loin
At least 3 garlic cloves, sliced
1/2 c. cider vinegar
3 bay leaves
1 t. dried thyme, or 1 T. fresh thyme, chopped
Drop the bay leaves into the bottom of a crock pot. Cut slits all over the pork and insert the garlic slices. Add to the crock pot, along with the cider vinegar and the thyme, and cook on high 4 hours or low for 6-8 hours.
You'll have leftovers for days!
