Why Low Fat?
I personally do not eat anything that's been made artificially low- or non-fat. Think 'chemical ****storm' and you'll see why. When they remove fat, they have to replace it with something, and it's usually carbs.
Also, I'm a DSer, so I only absorb 20% of the fat I eat anyway---and if I don't eat enough of it, I can't poop. (*grin*) Constipation SUCKS.
I don't know how much you have to lose, but please research the Duodenal Switch too. It has the same fully-functional stomach as the Sleeve, plus an intestinal bypass that causes dramatic, permanent changes in how our bodies metabolize food. It also causes us to always and forever malabsorb a significant per centage of the calories we eat. This is probably why the DS has the very best long-term, maintained weight-loss stats, period.
Unfortunately, I have a lot to lose (i'm 318 and need to get down to about 145 to be of normal weight), but they aren't recommending any of the malabsorption procedures for me because of a medication I will have to take for the rest of my life regardless of my weight. I'm really going to have to step up my effort.

really? I was worried about him leaving it too large....especially after the show I saw last night. I was watching some re-runs of my 600lb life, Penny's story, and that woman was sleeved and lost NO WEIGHT AT ALL!!!!! I saw another thread on this board that discussed this particular episode, so I won't say too much more, but needless to say, I didn't sleep last night and vowed to eat low fat, low carb, high protein, whatever it takes to lose the weight and keep it off. I even started back tracking what I ate on My Fit Pal today!
I can't speak to the VSG part of your question, but personally, I pick and chose what fat I eat. I have come to like skim milk, so my milk is fat-free. Most of the yogurt I eat is fat free. Cottage cheese and mayo is low fat. But when it comes to "real" cheese, I have to have the full-fat variety, because I think the low-fat/no fat cheeses taste like crap.
