Need Your Thoughts about Acorn Squash

Happy Holidays Everyone. I am working on a side dish to feed 80+ people for a Christmas gathering meal. I acquired over 5 large bags of Acorn Squash . Would Acorn Squash  be appropriate to bring to this festivity?.. I found this recipe of Acorn squash online and made some for myself and loved it. I baked the Acorn Squash for 1 hour just a bit of browning on top added some brown sugar and diced apples in it, it turned out delicious. I have never seen anyone having Acorn Squash for a Christmas side dish for their meal. I guess everyone has their own favorites . What is your Opinion about Acorn Squash for a side dish? I would eat this over mashed potatoes.., thanks for your input...PeaceV Wendy

Personally I loathe any kind of squash but my mom used to make it all the time. I've seen lots of folks have squash as a side dish and your recipes sounds like a tasty and simple one to do. I'd say go for it!

Acorn squash has always been a part of our Christmas dinner.  I bake mine scoop out the fleshy part mix with butter garlic and cheese put back in the oven and bake another 10 mins approx Until it all melts together.  There is never any left over.  I hope I can still enjoy squash after my surgery its a favorite food definitely eat it over potatoes.  Enjoy your Christmas dinner

My family mostly has never eaten squash and would turn their noses up if I brought it for Christmas dinner.  There would be a chorus of "Ugh, gross, yucky" and I would be bringing the untouched dish home with me.

You know how your family is and whether they will accept this.  For my family, I just bring something tried and true.

I thinl acron squash would be a wounderful side dish. I've peeled them and cut them up and used a little brown sugar and butter and cooked them down they were really good.

I love all kinds of squash except spaghetti squash -- sorry, that's no substitute for spaghetti - get real!  Acorn squash, however, is an excellent side dish for Christmas.  I couldn't handle the brown sugar, but most folks can.  I say go for it.  It's a tasty and healthy side dish.
