When the heck did I start eating carrots?..and other musings

Carrots, my most hated of enemies. We are foes, carrot, you and I. Since I slipped you under the table into my napkin as a child, to pushing you to the very side of my plate as an adult..You did not belong in my life. 

Today I find myself sitting by the window, looking out onto the Caribbean Sea. Happily munching on hard boiled egg whites, Ital vegan cornbread, hummus...and you..my most feared of enemy..the baby carrot..

So today, I happily ate carrots. I also ran my fastest 1 mile, without stopping. Firsts for me.

2 years ago, I would have said neither could have ever happened. Today, things have changed.

The point of my ramble? Never say never, never say it isnt possible, you are LIMITLESS. You are an unended story, you can write your own scenes. In the word's of a tattoo on my friend Tristan, "IMPOSSIBLE IS NOTHING".

Did I ever think I would be healthy again? Did I ever think I would be happy eating healthy foods? Did I ever think I could run, run a mile, run a mile without stopping. I never thought I would be doing those things..

Things take time, but you will get there. Even when the road is tough!! its not a sprint, this is a marathon.

And here we are.

Anything is possible! Now, pass the carrots!

Congrats!  Enjoy!  And for me carrots and corn I both love but never eat, they are full of carbs and carbs make me crave carbs.  It really is a life long journey and whatever works for you do it.

 Some of my favorite foods now, are foods that I WOULD NOT eat before. In fact - I wouldnt even eat food if it TOUCHED some of these items that I now devour on a daily basis:

Onions, garlic, cauliflower, peppers, capers, spinach....the list goes on! Its crazy how much our tastes change. I think what helped me was not eating processed food for over 6 months. Once you get the fake food out of your system, things that are naturally good for us start tasting better.
