I Eat these Muffins Everyday -Healthy or Not?!

I use any flavor cake mix with 1 can of pumpkin  then bake til done..and form them into small healthy muffins, I dont use eggs or oil.. have also made them into delicious healthy pancakes too  .Right???.....Maybe Not!!! so sez my fiance' ! I fell in love with him the first day i saw him in his kitchen making a strawberry banana smoothie.. well now we fight alot about food.. my so called 'healthy' version muffins sez they are not so healthy according to him..I eat them pretty much everyday..IDK I havent regained any weight.. he has gained 10 lbs.. he eats velveeta cheese and regular ice cream and regular mayo..I dont eat those items that  he does..Is it really that bad? i dont think so.. I love my version of healthy muffins.. I am puzzled though.. I know there are some carbs in the cake mix, if that is so bad why havent i regained any weight from it, i eat lots of bread, i love my cinnamon toast and sandwiches with 100 % wheat bread....I dont want to fight over food,,geeeezz .. fight over food when we are fat  , fight over food when we are thin.. well thanks for your visit and any input.....Peace \/  Wendy

I think "If it ain't broke, don't fix it."  If you start to gain, you might revisit your carb intake, but you're not, so why not enjoy?

My personal food plan wouldn't call for this item on a regular basis, because I tend to develop cravings when I eat refined flour and sugar.  (I don't worry about fat, so I eat eggs, regular mayo, full-fat cheeses, etc.).  But each of us needs to work out what works for US, and it appears you have.  Good job!

I wouldn't eat those muffins with boxed cake mix, but I wouldn't tell anyone what to eat.  My bf is dieting and I completely support him and when he gets miserable and wants pizza I support that too, no one can eat diet food every minute of everyday without anything good or fattening.  If your boyfriend doesn't think they are healthy tell him to make you some himself, otherwise stfu.

How many calories is in one of the muffins?  About how many carbs?  How much sugar?

Without the stats, I don't know how any here can tell you if they seem healthy or not.  The fact that you haven't gained weight doesn't mean they are healthy, though.

Why are you fighting about food, though?  Why does he care what you eat?  Does he think you should not eat anything that is not healthy and that he should get to decided what you can and cannot eat?

I do that once in a while and share it with with my family.  For us, it's  a treat and I'm maintaining my  weight loss.I can't speak for anybody else, but as long as you get your protein, vitamins, and fluid in.  How's your lab work? The only thing that I would tell you is that becareful of the bread because the carbs are really addictive.  What does the dietician//nutrionist say?

I don't think the problem is the muffins.  I think the problem is you have a boyfriend who thinks it's his place to tell you what you can or cannot eat.  It is no ones business but mine what I eat, when I eat, how much I eat, etc.  I am an adult and the first time a guy commented on what I was eating would be the last time.  He would either get t he message that it isn't appropriate to tell grown ups what they can eat or he would be on the way out.
Now, if you asked his advice that is different but if he just volunteered his criticism on your food on his own?  Signs of things to come.

i make the muffins small size. there are 2 muffin size pans, i make the small sized ones. I call them  Bite Size

The problem isn't the muffins, per se: it'a the boyfriend.  What you eat is your business, not his and he sounds like an abusive control freak.

I might have you confused with someone else but I could swear that you have made previous comments which seem to indicate he is an abusive control freak.

Why no eggs? Eggs are protein.

*I* wouldn't eat them, but then, I'm not much of a fan of cake.Seems like a waste of simple carbs to me.
