A big holiday hit!

Crispy Topped Creamy Spinach

2 packages (10 ounce) frozen chopped spinach
1 tub cream cheese spread with chive and onion
1/2 cup ranch dressing
2 eggs, beaten
1 1/2 cups shredded cheddar**
1 cup chopped french fried onions

Preheat oven to 375. Spray a 2 quart casserole dish with cooking spray.
Mix spinach (thawed and drained but not squeezed dry), cream cheese, ranch dressing and eggs.
Stir in 3/4 cups of the cheese and 1/2 cup of the onions.
Spoon mixture into casserole dish.
Mix remaining cheese and onions and sprinkle on top.
Bake for 20-25 minutes or until hot and bubbly.

**The recipe calls for Kraft Shredded Triple Cheddar with a touch of Philadelphia but any cheddar will do.
