Just off the top of my head, applesauce is used as a moisturizing agent in sweets, like cakes and muffins and things instead of butter and eggs. I don't know that it would taste very good in cornbread dressing, which is more of a *savory* taste.

Are you planning to saute your onions and celery? Is that why you need the butter? If so, try just steaming them or microwaving them until soft, then add two or three eggs to the dressing to replace the moisture in the butter. Eggs would give you a little boost in protein too.

I use apple sauce and unfiltered apple juice. To balance the sweetnees, I used a 1/2 lb  of pork saudage, which uses sage and other spices. I have had butchers give me some spice alone and it tastes exactly the same.

I have even added fresh apple slices, walnuts, water chestnuts and craisins. Not all at the same time, mind you.

Of course, I don't think there is anything at all wrong with using butter or some combination that includes butter.

Happy Thanksgiving!

try fat free chicken broth to saute veggies in and moisten the bread to the desired consistency if you don't want to use the butter

I make a traditional bread/butter/celery type stuffing and I started cutting back the butter and using more chicken broth ..and it adds great flavor as well, works out fine for me

I sautee my onions and celery in a small amount of butter then just add extra broth to the dressing till it's the right texture. Hope this helps.

unless you are planning to eat the whole pan of dressing, you wont be eating a half cup pf butter.

at best you will be eating a couple of teaspoons of butter.

This is exactly what I was thinking.. for one small serving that you'll likely be eating, you won't be ingesting that much.. and it will sure taste a heck of a lot better than trying to go lo-fat..

Use the butter, why take a chance of ruining your dressing.  How much can you eat of the dressing and how much butter will actually be in your small portion?  I suspect your portion will be minimal so you won't actually be eating much butter.

You'll take in more carbs from the stuffing then fat from butter.
