Eating with a DS, PART 2: Another Day in the Life (pics!)
Nicolle, thanks so much for adding to this thread! This is awesome to have the perspective of a 3 year vet successfully in maintenance.
I especially appreciate you taking time from your fun evening out to photograph your food. I am completely jealous of your dinner out! It looks absolutely, utterly fantastic. NOM.
Like you, I do not know what the future holds, but I am thrilled with my current lifestyle and results. If, down the road, I have to make some adjustments, I'll cross that bridge when I come to it. It is inspiring for me to see folks like you who are 3, 5, even 10 years out and still having amazing success.

Oh, our dinner partners thought it was hilarious that I was taking pictures and were actually disappointed for me that I forgot to take the dessert pic before we dove in! The other diners were unfazed. I guess it's not unusual to take pix of food there. Hmmm...must be what heaven looks like.
I never journal what I eat, so this was a useful exercise for me. I CAN see lots of places where I will cut carbs if I face some regain. I weigh myself daily, even this far out, so I will be vigil.

"Medium well," thank you very much. Nice and juicy pink inside, but cooked nicely on the outside. I really only started eating meat once I got my DS, so I am working my way up the bloody meat scale.

I had the kick-butt duodenal switch (DS)!
HW: 344 lbs CW: 150 lbs
Type 2 diabetes and sleep apnea GONE!
Sure!
Take a muffin pan.
Spray with Pam.
Roll out crescent roll dough into a big rectangle (or buy the ones that are sheets).
Cut the crescent roll into 12 rectangle pieces
Put a small rectangle of crescent dough in the bottom of each muffin cup.
Put a thick layer of cheese (any you like--I use a bagged, shredded mixture) on the crescent roll.
Put crumbled, cooked bacon (as much as you like) into each cup, on top of cheese.
Put six eggs and some milk in a bowl with salt and pepper, all to taste.
Pour egg mixture on top of cheese and bacon.
Put extra cheese on the top of each muffin.
Bake for 10-15 minutes at 400 degrees.
Enjoy!
