White Chicken Chilli Recipe
I am loving this recipe that I found on the back of a bush's navy bean can lol :P I changed it to one teaspoon of olive of because it calls for too much. It also calls for flour but I take that out too its not as thick but I don't tolerate flour. I also make sure to drain the beans because it makes it less watery.
Navy beans have 6g of protein per serving and the chicken is 20 something grams per serving so its packed with protein!

1 teaspoon olive oil 1 medium onion, finely chopped 1 can (4-ounces) chopped green chilies, drained 2 teaspoons ground cumin 2 cans (16 ounces) BUSH'S Navy BEANS or BUSH'S BEST Great Northern Beans 1 can (14.5 ounces) chicken broth 1 ½ cups finely chopped cooked chicken breast Shredded Monterey Jack cheese (optional) Sour cream (optional) Salsa (optional) In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes. Add chicken; coo****il hot. Garnish with cheese, sour cream and salsa, if desired. |

Sounds great, very similar to what I make. It's one of my favorite cool weather dishes, and so healthy. I make it to almost every WLS support group gathering/potluck I attend.
