Need Soft Food Recipes

I'm just a few days away from "real" soft food stage and I'm looking for recipes.  Anyone have a favorite site or recipe they want to share with me?

I have used Eggface's Cottage Cheese Pancakes.  They are wonderful. I also ate a lot of refried beans with low-fat cheese. Creamed soups are good. Yogurt. Farina. I didn't do a lot cooking during this phase as I couldn't eat much, and felt I was having to throw away a lot of food. Good Luck. Leslie

When I was switched over to soft food, I used to make ann Egg Beaters omelette with ricotta cheese inside it. It may not sound great, but It sure beats liquid diets. Also, ricoota cheese baked with some spagetti sauce on top of it is good too.

how do you bake ricotta cheese without it melting away?..I tried some ground beef with ricotta cheese and marinara sauce and it wasnt all that great.. any ideas or tips would be much appreciated...

Be easy with the salt...  Here I have a Forman grill, the smallest one they got... its my best friend!! LOL I usually get chicken, turkey, ground beef (steaks are too tough) thin sliced pork... use a meat mallet (my 2nd best friend..lol) and whack the hell out of my cuts of meat. Use salad dressing or lil spices...lil olive oil, marinate the meat(or freeze it for later use) and cook it on the grill.  It comes out tender and the grill drains ALOT of the naughty fat. Microwave some veggies... less than 10minutes...dinner is served.  I also made alot of soups... during that stage. Because I love soup. LOL... You can use those protein soup supplements as a broth base, then add veggies, some tenderized meat...seasoings. Its fresh and has less salt than the stuff in a can. I dont have specific recipes, Im not that type of cook. I experiment and use common sense. When u cook like that... you wont need recipes, because ull know certain things naturally go together. Simple formula... Lean meat, tenderized with mallet...  Marinate with seasonings... if its dry, use a lil olive oil and/or 'splash' of vinegar for it to absorb Or use salad dressing...aka the same concept Cook lightly... no frying, saute, bake, broil or simmer Serve with complimentary veggies and/or starch Another good idea, my non-wls friend like..is shrimp (big jumbo, fully cooked..peen and eat)... saute with butter or olive oil...then add some garlic, cilantro... and lemon, or lime... serve with veggies or instant potatoes or cous cous.

I did a ground turkey taco mix and threw it in the food processor/blender.  You make it just like normal but you throw it in the blender and puree it.   Did you know scallops are considered soft foods??  I like seafood. The best bet is the check out eggface's website, her recipes are the bomb!

I like tuna or chicken from a can, with a little lite mayo, and liquid smoke.  It really adds a ton of flavor, and it's quick and easy for a non cook like me.  I"m in the soft food stage right now too, so I'm glad you posted this.
