Hey Debbie,
I just got home and haven't been online at work at all this week I don't think! Maybe a little at the first of the week, lurking. I've worked over for the last few days. This is a busy time of the year in the Catholic Church. We are having "Rite of Election" this month. We had it in Dothan and Montgomery already and it is at the Cathedral here in Mobile this Sunday. It involves all the parishes and everyone who has decided to become a Catholic. There are almost 50 people who have never been baptized Christian and 150 who were baptized in another Christian faith who have decided to become a Catholic. This is when then come before the Archbishop and state there intentions. The go through several learning and discerning periods between now and Easter when they come into full Communion with the Catholic community through Baptism or if they are baptized Christians, through Holy Communion and Confirmation. The Catholic Church recognizes all Christian Baptisms. I didn't mean to go off on a tangent. Anyway this is a VERY busy time since our office handles the whole planning portion and since I am office manager/administrative assistant/bookkeeper...Calgon take me away. This really is a beautiful time in our Faith, but exhausting when you work for the church.
Anyway, here is my recipe: I get enough meatballs to fill my large crockpot. I usually heat them in the oven ahead of time and drain them well on papertowels to get some of the grease off as they can be VERY greasy. I cut two bell peppers in large chunks, and add them to two cans drained pineapple chunks (in their own juice), about a cup or 1/-1/2 cups salsa (I use Pace Mild chunky), about 3/4 to a cup of Splenda and a good splash of Worchestershire sauce. I usually mix this altogether in a bowl and mix it really well and then pour it over the meatballs in the crockpot and cook on low all day or night (according to when I need them) or you can cook them on high for 4 to 5 hours. I have also cooked them on top of the stove for a couple of hours...the meatballs are done so you just have to get the flavors together. The long time on low in the crockpot seems to taste the best. I hope this helps.
I wish we could be there Saturday, but we are in the middle of a cleaning out project because my MIL is giving us a queen size solid oak BR suite for our front bedroom and she is coming to my house Friday and that is the junk room and the rest of my house seems to be the junk house, so we are working tonight and all day Saturday. I have to work at the Cathedral from 1:30 to about 5:30 on Sunday. I hate that we have to miss it again.
We got the invite for next Saturday and we will be there. Do we need to let Scott and Lisa know too? Love you and can't wait to see you guys!!
