Quick, Easy -N- Fast Chicken Casserole Recipe

2 C. cooked, cubed chicken
2 C. chopped celery
1 C. chopped onion
2 T. chopped pimiento
1 t. salt
1/4 C. toasted almonds (slivered)
1/2 C. mayonnaise

Mix and spoon into casserole dish. Top with:

1 1/2 C. shredded Mozzarella cheese and 1/2 C. crushed Ritz crackers mixed with:
1 T. butter or margarine

Bake at 350°F until crumbs are golden, about 25 minutes.


Quick, Easy -N- Fast  Penny Casserole

1 1/4 lbs. red potatoes, cubed
2 C. cubed ham
1 C. frozen peas
1 can condensed cream of mushroom soup
3 T. butter, melted
1 T. mustard

Cook potatoes in boiling water; drain. In greased 2 1/2-quart baking dish, combine potatoes, ham and peas. Combine remaining ingredients and stir in. Bake uncovered at 350°F. for 25 minutes.

Makes 5 to 6 servings.



Mexico Joes

1 pound ground meat: pork, chicken, turkey, beef, or a combination
2/3 cup onion, chopped
2/3 cup green pepper, chopped
1 to 4 cloves garlic, to taste
1 can (8 ounces) tomato sauce
1 teaspoon Worcestershire sauce
2 teaspoons chili powder, or up to 2 tablespoons, to taste
Salt and pepper, to taste
1/4 teaspoon cayenne pepper, optional

Sauté ground meat, onion, green pepper and garlic in skillet and strain off excess fat. Add tomato sauce, Worcestershire sauce, chili powder and salt and pepper. Cook uncovered for about 10 minutes.

Ladle over hamburger buns or sandwich-size buns.

Garnish with grated cheese or whatever is available - sliced tomatoes, sliced fresh green and/or red pepper, diced fresh onions, cream cheese mixed with green chiles, diced green chiles or green olives.


Nothing tastes as good as being thinner feels.
