Ideas & Suggestions Needed

I need some help planning the menus.  Heres the deal.  At my work the residents eat a large lunch and a small supper.  Could you please brain storm and help me come up with a FAST (30 minutes or less to fix) supper.  Most of the time its soups and sandwiches BUT they are extremely tired of the same ole same ole and want CHANGE.  Please help!

Chicky Boom-Boom Casserole

1 can green beans, drained
1 can corn, drained
1 can cream of mushroom soup
2 cups chicken, cooked, diced
1 cup cooked rice
3/4 cup milk
2 oz. French Fried Onion Pieces

Combine all ingredient but onions in a 2 quart baking dish.  Bake at 350 degrees for 20 minutes.  Top with onions.  Bake 10 minutes more, or until golden brown. 


2-Step Inside-Out Chicken Pot Pie

1 lb. skinless, boneless chicken breast, cut-up
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 bag (16 oz.) frozen vegetable combination (broccoli, cauliflower, carrots)
8 hot biscuits, split

COOK chicken in nonstick skillet until browned, stirring often.

ADD soup and vegetables. Cover and simmer until done. Serve on biscuits.


Nothing tastes as good as being thinner feels.

I have to walk early in the morning, before my brain figures out what I'm doing.

Sounds yummy Vic!  Thanks!  I love the Casserole idea!  I like the fact that most can be frozen until needed!

Anyone else?
