Salmon Croquettes

I don't do the flour, corn meal, or salt...and use saltines that have got soggy instead.  I like the crackers better and they have enough salt.    I don't put the onion in either, as I have that in the tartar sauce that I make afterward.   Tartar sauce is pretty simple...you just finely chop onion (1/4 c. or so), add splenda sweetened sweet relish (1/4 c.or so), and about a c. of mayonaise (if you use the low fat kind of salad dressing, you will discover that it makes the tartar sauce thinner).  You can add horseradish, if you are not allergic to it or a little lemon juice, if you want it a bit more tart.

I have tried both salmon and tuna patties, prefer the salmon..... I make mine pretty close to your recipe, but omit the onions... very delicious..... just wish dh like them as much as me, cause I could eat them several times a week
