SWEET AND SOUR SAUCE
1can crushed pineapple
Green pepper,chopped
2tbsp. corn starch
1/2cup cider vinegar
1/8cup sugar substitute
Heat pineapple and green pepper in saucepan. Mix vinegar with corn starch. Add to pineapple and green pepper in saucepan.Cook thoroughly and allow to thichen.Add sweetener. Use as a sauce for meatballs. Can be served with rice.
THOUSAND ISLAND DRESSING
3/4 cup low-fat cottage cheese
2tbsp.skim milk
2tbsp.green pepper
minced
1tbsp.chopped dill pickle
1/3 tomato juice
2 tbsp. onion flakes
Blend milk and cottage cheese in blender.Add all other ingredients and blend for 1 minute. Cover and refrigerate until ready for use. Yield: 2 tablespoons per serving.
