Splenda Gingerbread Cookie
Since it is Christmas and I am busy making cookies for everybody else, I wanted something that was safe for me and could be counted in my daily food plan over on Sparkpeople. I reworked a Splenda recipe to get rid of the white flour and replaced it with some healthier flours I already had. Both kids liked it though they said it needed frosting. DH didn't like it, said it was too 'plain'. (meaning not sweet enough) For my post-op taste buds it is really good. Here's the link for anybody who'd like to see it:
