Vanilla Custard - Comfort Food - Soft Stage!
Vanilla Custard
4 eggs, beaten
1 can evaporated milk
1 c. milk
1/2 c. Splenda
2 t. vanilla extract
pinch of salt
nutmeg - optional
Whisk everything except nutmeg together until foamy. Pour through a sieve into six 4 ounce custard cups placed in a 9 x 13 inch pan. Sprinkle with nutmeg. Fill the pan with ho****er halfway up the sides of custard cups. Bake in a 325 degree oven for just 25-30 minutes. Center should still be jiggly, but when you stick in a sharp knife it comes out clean and nothing oozes from the hole. Remove from pan and cool on wire racks. Fabulous warm, or chill!!

I wouldn't be able to eat it now either . I have found out that I am very lactose intolerant . I haven't seen you here much . Did you see that I was thinking that yesterday was the support meeting . lol . I only have 3 weeks from tomorrow , till my surgery . Yeah . I've been getting in 3-4 shakes a day & I feel like i've lost weight . The last time I was on a scale (last week) I had lost 5-6 pounds . I'm sure it's more now . I know i'll lose more during my pre-op liquid phase . I've gotten all my vitamins , shakes , queezy pops & i'm ready . Kathy
