one of my go to foods since I'm almost 7 yrs post op is crustless quiche made with Greek yogurt

1/2 cup of plain non-fat Greek yogurt

3-4 eggs

1/3 cup of low fat shredded cheese

1 cup of chopped mushrooms

1/2 cup of spinach chopped and drained

mix all together and bake for about 45 min at 350 degrees

the best thing about this food it can be frozen for later and it can be made in small muffin pans, and u can substitute the veggies for other veggies, ham, bacon of sausage

since I been making this I don't want the quiche made in the pie crust

this is a low carb and low fat food item

I am pretty sure this recipe or something similar was posted before

Sounds good. I love my morning omelette...never thought to add yogurt. I'm going to try it out.
