Anyone Eating Shirataki Noodles?

My hubby is diabetic so they are all we eat when it comes to noodles. We like House Foods brand tofu noodles because their texture is the closest to wheat pasta. They come in fettuccini style, spaghetti style, macaroni style and shells. Maybe more? We buy them in Asian grocery stores but you can get them on Amazon too. I find they need to simmer in the sauce or soup for 10 min or so after rinsing and draining.
