High Protein Chocolate Chip Pumpkin Bread

i love all things pumpkin, so made this (it makes 2 large loaves)

173 C, 5 g fat, 20 g C, 11 g protein (1/12 of loaf is serving)

Hope it helps someone else to feel like fall :)

HIGH PROTEIN CHOCOLATE CHIP PUMPKIN BREAD

Yields 10 servings: 1 slice 173 C; 5 g Fat; 2 G Carb; 11g Protein

Preheat oven to 350. Line 2 baking pans with parchment paper on bottom. (Hint: I use pam before putting down parchment paper)

1 can Libby Pumpkin puree

6 whole eggs

1 ½ C oat flour (grind oatmeal in your blender to make your own)

½ C almond milk

½ C of coconut sugar (If you use Stevia, I would use a cup)

64 grams of vanilla protein powder

½ t vanilla

2 t cinnamon

½ t nutmeg

¼ t salt

2 t baking soda

1 C sugar free chocolate chips

  1. Blend pumpkin, almond milk, vanilla and eggs into mixer and beat until fluffy.

  2. Add everything else, except chips, and blend.

  3. Stir in chips lightly.

  4. Pour into prepared pan.

Bake 34-36 minutes. Cool 10 minutes and turn out onto rack.

When cool, wrap tightly in aluminum foil. Can be frozen and thawed.

I used more spice than it called for but it might be too much for some people.

Can almond milk be substituted for fairlife milk, you think?

I love all things pumpkin too. But I'd sooner prefer to buy a single (regular) muffin, cookie etc then to dilude myself into thinking I would only eat 1/12 of a loaf in a day.

Me too. I'm not so good at limiting myself to one little serving. Especially if it's a "treat" type of food.

There's lots of stuff I just can't bring in the house anymore. Maybe someday? Probably not. An addict is an addict is an addict.

Yeah. I can buy and eat only one of something. But if I make 12, I'm eating 12. It might take me a day longerv than before surgery, but I'm still eating tg em all.

Why do we all go pumpkin crazy in fall? I swear, any other time of the year I don't care, now I want pumpkin everything.

Most if it isn't even pumpkin! There is no pumpkin at all in "pumpkin spice" things. And the cans of pumpkin used to make pumpkin pies and breads, etc are actually sqash, not pumkin.

Your so right. I have eaten real pumpkin, it tastes nothing like pumpkin flavoring. The wizardry of the food world.

In addition to the portion concerns, the stats aren't all that great for someone in weight-loss mode. We should be shooting for 10g protein for every 100 calories, so it's short on that. Many folks also try to keep their carbs under 25g per day as well, and this would blow mostly past that limit.

Trying to make foods that would otherwise be "off limits," like cake and cookies, can be very dangerous for some folks.
