Hi and welcome!

My way of eating is mainly protein. Sides I make tend to be relatively simple veggies. Sautéed or roasted asparagus, brussels sprouts, broccoli.. whatever veg looks good when I'm at the store for the week. Both roasting and sautéing involve olive oil and seasonings - usually some combination of salt, pepper, bacon, and garlic. Whole roasted cauliflower is also delicious.

Steamed veggies are easy with a tiny bit of butter (like 1 teaspoon). Broccoli, green beans, carrots.

I can't really eat sides after I eat my protein so I try and squeeze in a bite or two of the vegetables I make for the fam. You can be creative. We made sautéed spinach, mushroom, and bacon recently. Another one I like a lot are Brussels sprouts with olive oil and Parmesan (cooked fairly soft). Asparagus grilled in the oven with olive oil and seasoning worked out pretty good too. Carbs are no good, so I try and stay away from the pasta and the rice. I may have a spoon full, but I save my carbs for my occasional yogurt, oatmeal, or popcorn.
