Struggling with Left Overs

Depending how you were raised, "wasting food" is guilt inducing. I was used to cooking 3 meals a day for 6 people (4 kids), but I am most fortunately married to the best leftover eater ever created. We use small, 2 serving (well 4 since my VGS) size containers that are stackable, use a non permanent marker for the use by date and stick it in the freezer.

In my case, better to "waste" than "waist"!

My daughter in law is from China, and her parents told her to clean her plate because children were starving in India. So....

Leftovers in my family are best fashioned as a brand new meal.

  • Meatloaf becomes stuffed peppers or cabbage rolls (can also go into spaghetti sauce)
  • steak or rare roast beef becomes stroganoff
  • Roasted chicken becomes all kinds of things (just add veggies and cheese, chix salad, soup)

One thing you can do with that chili is make enchiladas. Add a little vinegar and sweetener for a sauce for short ribs (or country style ribs) cooked slowly.
