oooh!! I'm going to have to look!

So do you just sprinkle curry on your chicken? I've never used it before.

My basic method for curry is as follows:

saute onion and garlic

add in cubes of meat w/ curry powder or curry paste

saute until meat is cooked through

add in "wet" component (can of diced tomatoes, can of coconut milk, greek yogurt, even jus****er)

simmer until heated through and slightly thickened

Then sometimes I'll add a can of drained chickpeas or frozen peas.

I love chicken. I eat it all kinds of ways. This early out, I have heard the acronym KISS used...keep it simple, s____ ;) I say that in a nice way! While it's tempting to go all out with 47 items in a recipe, when you're eating 2 or 3 oz of meat per meal, it can be a little overwhelming.

I like chicken the following ways:

Chicken breasts or thighs in the crockpot with low sugar bbq sauce - very tender!

Ground chicken with snow peas and onions and a little bit of an Asian style sauce from the grocery store

Saute chicken in a little olive oil and then add jarred pesto sauce

Do you have Trader Joes? I used to buy their already grilled chicken strips (in the section by the cheese) with the balsamic vinegar flavor and then add some goat cheese to each chunk

Chicken enchiladas minus the wraps - a can of enchilada sauce, some shredded mexican cheese, a small can of green chiles, and bake it until it's bubbly and delicious

Chicken in the crockpot with ranch seasoning, greek yogurt or sour cream, and Frank's red hot sauce

Look up "crack chicken" - I wasn't in love with it but tons of people are obsessed!

Chicken salad - buy a rotisserie chicken and use some chicken to make a chicken salad with some mayo and a few red grapes, or a chicken salad with mayo and curry powder and a few raisins

Ground chicken or ground turkey with taco seasoning on it, with cheese and/or avocado

Early out, dry chicken posed quite a problem with me, but now at 4 years out, I can easily eat grilled chicken - we usually do tenders since they aren't as thick and so it's not as hard to guess when they are done.

Baked chicken wings with hot sauce are good too!

its all about what you can tolerate but I would follow your plan. If/when you do try it, obviously small bits and chew well. Some people have a tough time with burger and steaks. The first time I ate a burger (no bun) I vomitted after the 2nd bite. I think it was too dry.

I have always had trouble with chicken. 5 years out and 2 chicken wings and I am done for the night.

With chicken my best results come from brining it first. The removes the blood and replaces it with sal****er which ends up making for some very moist chicken. Then you can season/dress it anyway you like.

Chicken salad- poach a chicken breast until tender. Let cool. Chop, shred or purée. Add 2 tbl fat free Greek Yogurt and 2 tbl low fat mayonnaise, salt, pepper, celery seeds, dillor thyme to taste. Eat in a lettuce wrap!

Another simpler idea is to use the pre-cooked Great Value Grilled and Glazed Chicken breast fillets. Wrap in a bit of lettuce with low sugar ketchup or add Walden Farms mayo and a bit of cheese. Cut up and put in any sauce.

Grind it and add a little egg and parm. Form into a flat patty and prebake for about 10 minutes. Then add pizza toppings and "poof", you have a real good pizza knock off.

I was so afraid that the surgery would be the end of my creativity in the kitchen, but not so... what I come up with is a bit different (I stopped deep frying everthing... lol), but no less creative.

I really like thin sliced chicken breast with some grilled vegetables like bell pepper, yellow squash & onions with a tiny bit of soy sauce. I don't use too much since it is extremely high in sodium.
