Whatcha Eating Today VSGers? Tuesday 10/31/17
I'm so sorry you are in this situation. Our company just did this to a lot of people including many in my department. I was lucky that I was retiring early (they just hastened it). One of my very best people (always with super high ratings) who is just a couple of years short of early retirement will be going as they say that she isn't a "good fit" for any of the jobs. I think they don't like her age and salary level...

Haven't done one of these in a while but I do still meal plan most days. Traveling and weekends with the family can throw me off but I stick to my plan most of the time. These days I follow a Keto meal plan so don't freak out too much about the fat calories in my diet.
B: Bulletproof Coffee and a ham and cheese rollup with german mustard
S: Guacamole and Pistachios
L: Seafood Salad
S: Greek Yogurt with Stevia Based Water Enhancer (probably Blueberry)
D: Taco Lettuce Wraps (I wanted to make Thai Lettuce Wraps but I forgot to get limes and its too far to go back to the store).
S: Protein Peanut Butter
E: 3.5 mile run when it warms up a bit more, probably right before lunch. I prefer to do my exercise fasted in the morning but it was 40 degrees this morning and I don't have any warm running gear yet. May hit the gym this evening before trick or treaters show up.
What is protein peanut butter?

I am just about to post this as a halloween tip. But I take natural peanut butter (about a tablespoon), add chocolate protein powder to it, about a teaspoon of cocoa powder and a little bit of stevia to offset the bitterness of the cocoa powder and just ma**** all together with a spoon. Since you like Reese's Peanut butter cups (as do I), this is a very satisfying snack. I have also in the past added things like chia or flax. These days I tend to keep things a bit simpler.
Interesting! I wonder if the same thing could be done with PB2 powder for those who like to use it? It sounds tasty and I just bought a jar of peanut butter for a stir fry I'm making later this week...
(One of my friends once asked me, "I wanted a tablespoon of PB last night, but then I asked myself 'what would Gwen do?' and didn't eat it." I told her, "I totally would eat the PB. Assuming it's the good kind without added crap vs, you know, JIF or something.")

Yes it works with PB2, I found a similar product at Costco for a fraction of the price I think it is called PB Fit. Lasts a long time. If you mix it with some almond milk or arguable water, enough to make it paste like it works well. I prefer the consistency with natural chunky peanut butter. And yes, the kind of PB without sugar or anything although in a pinch I will use Peter Pan Natural (not too bad on the carbs) because my local store has it BOGO about every 3 weeks so I have some on hand as a backup. Unfortunately where I live now its about an hour drive to get to a whole foods or someplace that has a peanut/almond butter grinder and I am just not ambitious enough to try it in a food processor. Although I do have two jars of unsalted roasted peanuts I bought without reading the label that I could give it a shot with to see how it turns out.
I made homemade peanut butter once... here's the recipe I used -- https://altonbrown.com/homemade-peanut-butter-recipe/
I used maple syrup instead of honey, since I can't eat honey, but I'd imagine any sweetener (or not at all) would work well. It was surprisingly simple.

Thanks, I'll check it out. Alton always has some little twist. I would likely go with no sweetener and use something else to add to it, like protein powder. I have thought about making my own Nutellla using a similar approach. Roasted Hazelnuts, some cacao nibs, some cocoa powder, something like that. I have seen a few recipes for it.
It seems totally plausible that it would work. :)
