Good Morning! It's stormy and pouring here, but it was a gorgeous evening last night. Jon and I laid in the hammock on the front porch because it was over 70 degrees with a beautiful warm breeze. I guess it must have been blowing in this mess. I was really hoping to hike while the kids were gone this afternoon, but it's not looking very positive for that. I woke up with a headache this morning that coffee doesn't seem to be taking away, so I guess I'll need to take some Tylenol.

QOTD: Do you watch sports? If so, which ones? My short answer is mostly no. But, I do like some sports in person - just not on TV. I used to be part of a DIRT Track Racing pit crew, for years. I mostly changed tires and scraped mud. I also can't live where I do and not at least respect Hockey. I work for a NCAA D1 school (both men & women's) so we watch a lot of college games over the winter! Our women's team has been NCAA champs twice since I started working here.

Happy Sunday! It's really warm here this morning (70), but supposed to shower later. I'm hoping it's dry enough for an outdoor activity this afternoon but maybe not.

QOTD: Spor****ching on TV? Mostly not especially since DH now forgets that they are on. I used to watch with him (baseball and football primarily). I enjoy basketball in person, but haven't gone to a game in years. I expect we will go to some pre-season baseball games in Florida because several training camps are nearby.

Thoughts on the Real Good pizza? Worth the expense? I've been making low-carb tortilla pizzas that are SO good and have 20-25g of protein in a whole pizza.

I would say that if one wants to be able to not do any work, they are worth it (taste good). But they definitely are expensive. Share a recipe for your tortilla pizzas?

I'm not really using a recipe, so much as making 'left over pizza'. I've done pork, chicken, and turkey pepperoni.

The basic idea is 1.5oz of meat (or 1 serving of pepperoni) and then I do buffalo (Frank's & Ranch) or BBQ Sauce or standard pizza sauce. I toast a low-carb tortilla or pita in a frying pan, pile on the toppings (including 1oz of cheese) and then broil it until bubbly.

So yesterday, I did 1.5oz of leftover pork tenderloin. I sauteed a small amount of onion and mixed that in. I added 1 TBSP of Western Carolina BBQ sauce (tomato based) and 1 TBSP Hormel real bacon bits. I topped it with 1oz of Monterey Jack cheese. That was around 250 calories for the whole thing. I can't eat all of it, so I shared with Jon.

If you buy Joseph's brand flax, oat, and bran pita's they are lower carb (6g I think?) and higher protein. I couldn't get them this time so I'm using the Tortilla Factory low carb tortilla's (15g in the whole thing, I'm eating half. Lots of fiber though).

I'll look for those tortillas - thanks! Don't bother buying the pizzas, as this sounds better, but also not much work.

No, not much work at all. I've been throwing them together before work and re-warming them at the office. I find the tortillas and the pitas by the deli counter in our grocery stores.

If you have heard about or tried Real Good Pizza, here is a version you can make at home. I modified a recipe I found on KetoConnect to remove some of the fat so it is low carb and low fat:

10 ounces of left over rotisserie or roasted chicken (fat and skin removed)

1 ounce of Parmesan cheese

1 whole egg or 1/4 cup of eggbeaters

Preheat oven to 500 degrees.

Put the chicken and parm in a food processor and pulse until finely pureed.

Add the egg (eggbeaters) and stir well.

Place the mixture on a baking sheet (spray with non-stick cooking spray) and form into a round or square flat disc (1/4 inch thickness seems to work well).

Bake in oven for about 12 minutes.

Remove from oven and add your toppings: I used onions, mushrooms, 4 Tbsp of homemade pizza sauce, and 2 ounces of low fat mozzarella.

Bake again for 10-12 minutes (depending on the amount and type of toppings you have). Enjoy.

I cut mine in 4 pieces and had one piece as a meal.

Im up for church and I'll go see my dad and stepmom this afternoon.

Qotd only sports I like is gymnastics and figure skating. I like baseball in person.

Was planning on going to church and writing a paper. My son was in a wreck this A.M. and totalled his car. He's fine, the car is not.I will be going car shopping today instead. I went a few months back but I couldn't make the leap to having a car payment again. Now I have to, since my son will need my old car to drive.

QOTD I watch a lot of sports in person. Soccer, volleyball, basketball, and baseball for my kids. We see some U of L volleyball team and basketball games in person. I don't really watch it on tv.
