I've got a major problem!!!!HELP
It's been a while but I certainly know where to come when I need advice. So here goes, my job has me living in different countries, great I know except when you arrive to your newest residence of 2 years to find that most people are vegetarians and the meat in country is almost always tainted...WHAT???????????
I'm having a fit because if there's anything I know from this journey and my 3 years of maintaining is that I cannot consume all those carbs everyday and not regain. So far, I've gotten terribly sick at least once a week and have to turn to saltine crackers and soup to get through. I haven't gained anything (I figure from the constant diarrhea) but I certainly don't want to wait until I've gained anything to look for help. Please, please, please, impart your words of wisdom and ideas on me because at this point I'm getting ready to go back to shakes all day (since I can get that through the mail) and beans for dinner. I refuse to go back down the regain path.
I'm not sure what country you're in, but I assume if it's a mostly vegetarian country there many non-animal proteins available. I would focus on beans, lentils, and tofu if available. Yes, you will get carbs. And I know many people feel any amount of carbs halts weight loss, and I'm not going to argue with people's individual experiences, but I can tell you that I have lost nearly 185lbs and have been maintaining for almost 9 months by eating mainly vegetables, fruits and non-animal proteins. I do eat meat, but rarely more than 2-3 ounces a day. It can be done!

I googled "Nepal bariatric" and it seems like there are some bariatric clinics/surgeons there. It might make sense to contact them and ask what they advise their patients to eat.

Honestly, the medical care in Nepal is so far from good that I didn't even consider contacting someone here. They all will tell you to have chicken and pork or such but when it makes you sick because it's not being stored well etc it leaves me at a pause. In some good news though I got some cans of tuna fish through the mail yesterday so I'll be making everything from fish cakes to tuna salad with it.
Well, if you haven't contacted one of the bariatric centers, it might be worth trying.
Otherwise, I'd eat what the locals eat and just omit the rice.

This reminds me of the time I was on a cruise and one of our traveling companions dragged us to WalMart to search for something specific that was local.
As we were walking past the food section, I noticed that the meats were just... sitting out in the open on ice (not wrapped up). And then someone with an electric floor cleaner went past, and I saw all the crap from the floor fly up into the air and promptly fall back down and attach itself to the meat.
Yeah, I've never eaten any meals in that country since.

OMG, I've got so many stories. Since this post a month ago, I've gotten 2 stomach bugs resulting in terrible bouts of diarrhea. I've started losing but not in a healthy way, plus I was already at goal so my intention was not to lose anymore. I'm getting ready for plastics and the instructions from my surgeon was to beef up the protein to gain even more strength so I can heal quickly when we do the surgery. She was not happy with the unhealthy weight loss or the stomach bugs. They have some butter crackers here that taste a little better than saltines, they've been a life line :-(
