Whatcha Eating Today VSGers? Tuesday 8/29/17
Morning, VSGers! I'm up later than I wanted to be for having to be into work at 7:30. My coffee will not be so leisurely this morning. I start my class today. I'm taking a course called Terror & Terrorism. I got the syllabus yesterday and it looks like a fantastic course to take during our current political climate. In other news, I'm wearing white pants today for the first time in my life. I could use some prayers that they'll still be white when I have to go to class with all those college students
QOTD: If you could only eat one food for the rest of your life, what would you choose? I think I'd have to say yogurt or seafood. My tastes have become simple after WLS. I look forward to my morning yogurt daily (I can never have anything else for breakfast, either!). And seafood is just so perfect for us. High in protein, low in calories, and doesn't sit heavy in the sleeve!

E: Didn't meet with my trainer yesterday, as he was sick. I will meet with him tomorrow. I don't think I'll get much in today again because of it still being so busy at work.

Have you read about this guy's "all bacon all the time" diet? I see it pop up on FB from time to time. He claims to be super healthy and have lost weight but.... I wonder how he poops?

I actually slept well again last night and had no nightmares to wake up to this morning, so that's a win in my book. Thankfully I've still got 13 days until my next two classes start, but I've looked at the syllabi and I'm already feeling overwhelmed and out of my league. I've got serious imposter syndrome going on. :/
QOTD: Sushi. Nuff said.

3: I'm roasting FOUR eye round roasts. Note that I can't actually lift FOUR eye round roasts due to my current lifting restrictions, so this is a wee bit of an issue. I'll serve some tonight with horseradish cream sauce and roasted zucchini. The rest I'll cut into 1-ish lb chunks and freeze for later use. (I think my recipes is from Cook's Illustrated so I can't link it since it's behind a paywall. But it's basically salt for 18-24 hours and then cook at a really low temp for forever. In theory, if I could lift things, it's just as easy to cook four as it is to cook one!)

It's really funny since I'm totally not a chili-hot kind of person, but I love that mustard-hot. Mustard, wasabi, horseradish. All yum. :D
