Good morning and happy weekend everyone! Today is the bbq/party day for my dad, so I've got to get going. My goal is not to do any damage eatingwise today. I've never cooked a whole dinner for 25 people, so this is a challenge!

B - coffee and yogurt

My anniversary was awesome! Jon came to my work out with me and got to see what it was like to push/pull the sled and use the battle ropes and hex bar. Then we went out for an awesome dinner, where we got to share some sesame crusted ahi tuna and I had broiled scallops that were amazing.

Today is 5 months post surgery for me! I will post an update later with pictures, after our hike this morning. It's going to be a beautiful hot day here and I'm going to go take advantage of it!

I was wide awake at 6am this morning so I decided to get up and go get an early gym workout in for the day. Still plan to do some swimming later today too. This past week my tailbone has been hurting constantly. It's more of a soreness pain at the moment. I'm assuming it's because there isn't as much padding back there anymore. Hopefully it's just temporary and the soreness will dissipate.

B: protein oatmeal

L: 3 oz deli ham with whipped Greek cream cheese

D: Cuban pulled pork ( I am loving this recipe)

S: protein shake since I'm out of bars

E: 30 mins cardio, swimming laps

I actually found the recipe on a facebook group for WLS meals. Its below!

Crockpot Cuban Pulled Pork

1 Cup lime juice

1/2 cup grapefruit juice

6 cloves minced garlic

2 tsp dried oregano

1 tsp salt

1 tsp ground cumin

3 bay leaves

3 lbs pork loin roast

2 medium sliced onions

Makes about 12 servings about 23g protein, 6 carbs, 4g fat and 139 calories.

Directions:

Combine all ingredients except Pork and onion into a gallon size plastic bag. With a fork pierce the meat several times and place in bag. Place bag in a deep bowl and marinate in the refrigerator for 24-48 hours turning occasionally.

Place sliced onions in the bottom of the crock pot. Place meat on top of onions and pour excess marinade over meat. Cook on low for 10-12 hours or High for 5-6 hours. Using two forks, shred pork in crock pot to combine with onions ans juices before serving.

This is an optional but I did it and loved it a lot. For an extra kick drizzle Chimichurri Rojo sauce ( ingredients below) over pork before serving.

2 Tablespoons virgin olive oil

1/4 cup red wine vinegar

2 tsp paprika

1 tsp cayenne pepper

2 garlic cloves minced

1/2 tsp black pepper

1/2 tsp cumin

1/4 tsp salt.

Combine all ingredients in a jar, shake well and drizzle over pork before serving.

Definitely get a ****yx pillow if you don't have one already! The pain will eventually go away, especially with core work and time.

And then if you have a lower body lift it'll suck all over again since the places you sit on will be different!

B- 1 ounce slice of ham, Oikos triple zero strawberry yogurt with fresh raspberries and blackberries, 4 oz of Fair Life Chocolate milk (before breakfast)

L- 2 ounces of deli turkey spread with Laughing Cow cheese wedge, rolled around a pickle spear

D- meeting old friends and coworkers for dinner. I'm hoping the restaurant has their garlic fish dinner

S- if needed: peanuts, pork rinds
