Whatcha Eating Today VSGers? Sunday 5/14/17
My biggest thing is to brine large pieces of meat. I have a cooler dedicated just for brining. The picture below is from some pork butts that I did awhile back. You can also see my habanero love in there. I just smash them with a meat tenderizer and toss them in. I use coarse kosher or sea salt. I also tend to keep my temperature between 200-225 for most items. If I do anything the wants a meat temperature higher than 165 I pull it out, put it on heavy aluminum foil and spray apple juice (sometime juice and alcohol) on the meat. I then wrap it tight and fold the edges over multiple times. I then finsh cooking to the desired temperature. I use a leave in thermometer that I can remotely monitor from the house, garage, where ever I happen to be.

I'm copying this to save, thanks! People think I'm crazy when I say I think my smoked stuff is dry, but I think it is. At least drier than with other methods of cooking. I've only brined a turkey at Thanksgiving one year, but I'm going to have to try it this summer for the smoker!
I'd like to go to the gym today, but if I don't go, I'm not going to die.

Today is my first mother's day! It has always been a hard day for me because I've never had a mother, but today I am a mother and it's awesome. My gift was getting to sleep in!
B: 3oz scrambled eggs with butter (is it crazy that I can eat this much dense protein at 7 weeks out?)

Congrats on your first Mother's Day! And it's not surprising you can eat 3oz of scrambled eggs. I consider things like scrambled eggs, soft fish, peanut butter and beans more as soft protein. To me dense would be more your chicken, beef, pork, hard cheeses, etc. Those take a lot more time to get to 3 and 4 oz! Enjoy!
Congrats on your 1st mother's day! I agree with Cathy that I don't consider eggs a dense protein.
Funny enough I can barely get down 1 egg. A large egg with shell is around 2oz I guess. I can eat that plus 1/2oz of cheese and I'm stuffed. But that's not how it is for everything.
