There's snow today, but I still have class because school only had a 2-hour delay.  This is a good thing, because missing class doesn't remove obligation from learning the material.  

1: protein shake
2: tuna pouch (have to eat lunch at school between things today)
3: Bistro Bis!  Meeting with an out of town friend for dinner AND it's restaurant week!

Happy Monday!  I wi**** would snow here in Charlotte, NC one more time.  We only got a very slight dusting a few weeks ago and that's all we had. I want a little more!! 

I had a really good weekend and finally cleaned out my dresser and some of my closet.  I have a ton of clothes still that are too big for me.  I took two huge black trashbags of clothes to Goodwill.  I still have way too many clothes but it's a start!

Today's menu is pretty boring cus I bought stuff for meals yesterday but didn't actually PREPARE the food... that's kinda important! 

B: Hard boiled egg, string cheese and yummy pumpkin spice coffee (last bag and I will miss it until next Fall) 

L: Last of the low carb turkey chili

S: 2 oz boar's head chicken and a peanut butter banana Oikos yogurt (i'm very excited to try this flavor) 

D: Portobello mushroom filled with sausage, spinach, ricotta and pizza sauce baked in oven 

 

Oh I forgot exercise - Going to do quick 2 mile run and then arm weights.

That stuffed mushroom sounds heavenly.  Do you have a recipe you could share?

Hi Carol! 

I don't really have a recipe but pretty much every time I do pasta for my family, I use the meat, sauce and cheese in a Portabello mushroom cap. Tonight I am making  baked ziti for the family so I take the cap and hollow it out, then I'm gonna put some spinach in it, put a few Italian sausage slices, then top it with the ricotta cheese and sauce that I am gonna use in the ziti. You can add some additional mozzarella cheese on top also if you want.  I then bake it about 10 minutes or so and it gets all soft and melty.  SO YUMMY! I always keep mushroom caps in my fridge and stuff them will all kinds of stuff!

Busy Monday.  Back at it :)

I had to bring my brother in law to crossfit yesterday.  I was dreading it b/c he is super preachy about veganism and his lifting.  But they wanted to go so I brought them.  The workout was not too bad, but he immediately was kind of negative "this is all legs".  I said we could switch out some activities if he wanted, but no he wanted to do it as is.  He had terrible squat form, so my coach made him modify.  We go through the workout, then on the way to lunch he told me how his lifting was better because it was on a machine that focused on the muscle rather than squatting on your own.  I wanted to barf.  Yes you workout better than me and eat better than me.  If what you do is so much better then why did you want to come to my gym.  I think we can all do what we want and be happy with it.  I personally think the way I workout is better (for me) than what he does, but I don't go around knocking his ****  Rant done (hhahaha, prob not, but for now).  

On to today:

D: chicken thigh & brussel sprout (or stuffed mushrooms)

S: cottage cheese & berries

E: crossfit -- unless my ankle keeps killing - not sure what I did, but it started hurting after hockey last night.

LOL I can totally relate to this with your brother in law.  I cant stand when people push their ideals and way of life on me.  Everyone is different! You weren't forcing him to work out with you and he should have kept his opinions to himself!  I have a brother in law that was a functional alcoholic for YEARS and then because of some custody issues with his daughter, he stopped drinking altogether.  Now he is like the friggin alcohol police.  I drink about 5 times a year and over Thanksgiving weekend, ONE NIGHT I had TWO BEERS.  Mich Ultra, so not even heavy beers.  After those two, he was like making comments about how much I drank and if I said something he didnt agree with or missed something in the convo, he'd say OH go have another beer, Karin? You gonna have a third?  What else you gonna drink? 

It was very hard not come back at him with a very mean comment but i held my tongue and went back to the hotel early. OH FAMILY! so fun!

I know.  It freaking drives me nuts.  He mocks my husband for having gout thinking this will inspire him to get healthy.  That started some major drama as I could not hold my toungue with that.  My husband just wants to keep the peace, but arg!  

Its weird for me, I come from a family that is super supportive of each other.  My family is all over 1000 miles away and my husbands family is all less than 30 miles away.  I feel like we should be more involved with them, but I guess there is a reason my hubby doesn't want to spend a bunch of time with them.  

 

With all of the political garbage going on I unfortunately think it will just get worse.  It's no fun spending time with people when you are just keeping your trap shut the whole time.

Oh now I am feeling guilty.  My brother in law has now texted me thanking me for the workout.  he said he is super sore and ought to do that more often.  

Gar.  I think I hear everything he has to say super critically b/c of things in the past.  I gotta chill.
