OK, I have miracle noodles.  Anyone seen anything like that, but in lasagne noodles?

I use Dream Fields.  They are low carb - not no-carb.

I like the taste and texture and the carbs are low enough for me.

They have lasagna noodles as well as penne, elbows, and others.

There are a lot of articles accusing the dreamfield pasta to be a scam... not really low carb... 

as long as it is working for you - great.. buti would not count on it to be really low or no carbs pasta...

Well poo.  I'd like to find something to make Lasagne with.  Maybe I should just slice up butternut squash on my mandolin and dry it out...

I think zucchini 0 grilled - cna be much better than butternut squash. Or eggplants. - grilled.

Maybe.  I had pumpkin lasagne in Italy once.  The area my family was from, the fall, pumpkin was THE veg.  I love the flavor & texture of butternut squash, sweet potatoes, yams.  God, it would be FANTASTIC to make pumpkin torteloni with a pasta substitute.  But I just ain't that fancy!

What about eggplant, thinly sliced?  It has carbs but fairly low.

I wouldn't even worry about carbs with veggie slices.  That's why I posted the dehydrator question.  Now, as far as using veggies, I think I'd be more partial to squash, as it would have a better absorption of flavors and would be easier to cut through versus zucchini (which I have done before).

Sadly Dreamfields spiked my blood sugar like regular pasta when I tried it years ago.  Haven't since.

I use thinly sliced zucchini that I bake to get the water out of.  Same with eggplant.  I also will just layer ricotta and meat - still works usually.
