This is a pressure cooker recipe that I love. I would imagine if you don't have a pressure cooker you could put it in the oven, just not sure how long.
This eats like a dessert, but has an awesome nutritonal stat profile and is guilt free. Breakfast food at my house!
4 large eggs (cold)
2 cups skim milk
2 tsp vanilla
1/4 cup splenda (or sugar if you are not a splenda user)
1/8 tsp salt
cinnamon and nutmeg to taste
120 calories (if splenda was used), 11g protein
Directions:
- 1 cup water in the liner, place your trivet in. This is a pot in pot recipe (PIP).
- Whisk eggs until smooth, add remaining ingredients except cinnamon/nutmeg and whisk in.
- Divide into 4 ramekins (or 2 fiesta bowls) and sprinkle with cinnamon and nutmeg.
- Cover bowls with foil and place them on the trivet.
- 7 minutes high pressure, QR (quick release).
I have used one large bowl or 2 fiesta bowls- you might need to tinker with the cooktimes if you elect to do this, but forgot to write down the times used. If someone could post a time if the opt for this that would be great!

Thank goodness eggs don't give me a problem. I did just discover that apparently milk does now, though. During my liquids phase, I used to get queasy when drinking my protein shakes I made with skim milk. I just put it down to the protein powder as it was new for me. Then stopped the shakes when I went to solid protein. A couple days ago I decided I'd like a nice chocolate protein shake, and boy was I sorry. Within 15 mins I was queasy again. Poured it out and put protein powder in some broth...no problems. So, guess it's almond milk for me from now on lol.
I think I became lactose intolerant after the surgery, so now I only drink almond milk NOT regular cow's milk. However, the odd thing is I can eat cheese and other diary all day long without a problem!

Hard cheese and yogurt is easier to tolerate for the lactose challenged. Can't remember why, but there is a good reason for that :)

I can totally relate! Scrambled is ok sometimes but if I eat a boiled egg, OMG, nauseated and sick. I am 10 weeks out.
Hopefully we will both get over our aversion to eggs!
