E: Walked 20 mins this morning and will be going to the gym tonight after work for some cardio and weights

I just got back from a couple days at the ocean with family.  It wasn't a great diet week, but tomorrow is another day.

Breakfast - classic eggs, sausage, hash browns, and toast at the hotel.  Definitely not low carb.

Lunch - my usual salmon

Dinner - buffalo chicken spaghetti squash

snack - chicken with sun-dried tomatoes

Still having problems staying on track, but I won't give up.

B:  Yogurt (Homemade in Instant Pot, with Pumpkin added)

S:  Protein Coffee  (Coffee with GNC Protein Maxx added)

L:  2 Scrambled Eggs w/ Provolone Cheese added

D:  Baked Chicken Breast 4oz.

S:  Low Carb Pita Bread toasted w/ 1 pat butter.

 

Yesterday, someone asked about faux fried rice.... here's my recipe for fried rice with pork and shrimp:

12 oz. Shrimp 

1 large Egg

4 oz. Roasted Red Pepper

2 oz. Light Soy Sauce

1 Envelope McCormick Brown Gravy Mix

4 Cups Riced Cauliflower  (Riced Cauliflower available in most stores in produce section or frozen section)

4 oz. Pork (One pork chop)

Ginger, Garlic to taste.

Scramble egg and pour into non-stick fry pan, heat until set.  When cooled, cut into small squares.

Stir Fry riced cauliflower, adding soy sauce.  Set aside.

Stir Fry chopped pork.  Add red pepper.  Then add cooked cauliflower and egg and shrimp which have been cleaned and deveined and cut into small pieces.  Continue stiffing and add McCormick Brown Gravy mix which has been mixed with one cup water.  Stir fry until shrimp is no longer pink.  (Add frozen green peas and sliced scallions if desired)
