1 pot black beans and rice Instant Pot- super easy

Here is what is for dinner- this one is not in the pdf I sent around, and it is really easy. Makes 8 servings, 200 cals, 19g carb, 1g sugar, 15g protein, 5g fiber, 12% iron

2 tbsn olive oil (use Pam and save a lot of calories!)

1/2 onion chopped

1/2 green pepper chopped

1 can black beans 14 ounce or so size with liquid

1 tsp oregano

1/4 tsp sugar

2 tsp vinegar

1/2 tsp chicken based dissolved in 1/2 cup water

1/4 tsp cumin

1/4 tsp garlic powder

2.5 cups water

1.5 cups long grain white rice

Sautee onions and pepper until onion is translucent. Add in spices, vinegar, turkey (removed from bone) and beans. Stir. Pat bean mixture until it is consistent and flat (not smashed). Pour water over it, no stirring. Pour rice over top, no stirring. 4 minutes high pressure,5 minutes natural release, then 5 minutes to cool and fluff the rice. Iused frozen onion and peppers to make it even easier. 

8 servings and you can drop some of the carb if you don't eat the rice portion.

You can replace the rice for "riced" cauliflower.

That is a great idea. It came out last night very tasty, but far far too much rice. Next time I am cutting the rice in half and doubling the protein portions.
